How do you delete an OS such as Microsoft 2003 Server? Well actually I have it on my Laptop, and everytime I start my Laptop up I have to wait till it loads, and then pick Microsoft XP Home Edition. If I don't, it automatically goes into some loading process and then it takes forever to do nothing. Is there a way to automatically set it to start in XP Home edition but still have 03 Server as an option if I want to use it?

Yes. You'll need to find and edit the boot.ini file. This is usually located at C:\boot.ini.

PS - you can also set the selection timeout. I suggest putting it at 3 seconds or 5 seconds.
