Being today is my youngest son's birthday (13) and I get the honors of making the birthday cake. Since I had made one of these a few years back for my other son at home and since then this is what they request. This is also my favorite cake and I thought I would see what other peoples favorite cake is. Not many have heard of this, but my favorite cake is Mayonnaise Cake, it is like a rich Chocolate cake.

Mayonnaise Cake

2 ½ Cups Flour
1 ¼ Cups Sugar
¾ Teaspoon Salt
½ Cups Cocoa
1 ¼ Teaspoon Baking Soda
¾ Cups Mayonnaise
1 1/3 Cups Water
2 Tablespoons Vanilla

Directions:
Sift dry ingredients together and set aside,
Mix together Mayonnaise, Water, and Vanilla. Add dry ingredients and mix until well blended. Bake in 13 X 9 inch or (2 x 9" round) greased pan at 350 degrees for 25 to 30 minutes until cake tests done.

This is delicious with Peanut Butter frosting or any other type of frosting you so desire..We prefer fudge frosting..
