View Full Version : Makin My Own Beef Jerky
Stingray42 08-27-2006, 06:23 PM How do I go about doing this? It costs way too much at the stores!!
I've looked at Cabelas, they have some cool stuff, but how hard is it to make? Does it come out good, how long does it take, etcetc!!

one of the guys that works for me makes deer jerky every year, you have to slice it very thin then he soaks it in dales sauce and uses spices then puts it in a air dryer ( not sure of the correct name for it) but he said it takes about 5 or 6 hours to make one medium size bag full of it .

For the first batch I'm gonna make in the oven, Likely just hanging it from the racks in there. There are some fancy drying racks that I may go with later if I like what I come up with, I will probably even build my own.
There are also some really nice dehydrators (like you mention DJB) And Smokers, but they are pricy!!
Anyone have a good original flavour recipe? There are lots to buy, but I think I'm gonna make my own in the name of cheap jerky!! :D:metal: :gi:

mbgmike 08-27-2006, 07:21 PM I bought a kit at wal-mart. They had 5 or six flavors. Not as good as some of the local homemade recipe but alot better than what most stores sell. As usual I forgot the name. Deer Jerky to me is the best You just use the oven on the lowest seting for like 4 hrs worked great
70blowngmc 08-27-2006, 08:15 PM but the cheapest meat from your butcher have him slice it up thin paper thin then soak the meat in your sauce and then use a smoker or dehydrator i make dried fruits too pineapple and cranberries are good

BillGent 08-27-2006, 10:06 PM I saw this show on TV a while back. It was cheap to do and looked kinda fun. They say heat makes the meat way too dry.. so just use air..I really want to try it. Make sure its a paper filter.. not fiberglass.

project1971 08-27-2006, 10:25 PM i haven't made any in a LONG time my kids ask me to from time to time. Makes the house smell REALLY good! My mom used to dehydrate fresh pineapple now that was some great stuff. you have to use fresh though. apples too great to take camping takes up little space.
Ron 586 08-27-2006, 11:08 PM My niece uses a dehydrator and makes her own sauces and she makes it real hot for my son and his buddies. She makes it mild for her old uncle. My wife dries fruit and it's great. My neighbor brought us some watermelon he did in his and it was great. I bought the dehydrator and extra racks off a site on the Internet and it has been one of the best kitchen tools I've bought.

The only one I had that was better was something this old guy made at the gas station around the corner from my grandma's house in Karnes City, TX (near san anton).
I don't know specifics on jerky, I just know that 90% of the crap that comes prepackaged in the store is ASS-TACULAR such as Jack Link's and Pemmican and others. This "King B" stuff blows them right outta the water. Most jerkies in the store are either oily from the preservatives or dry as a bone and disgusting. Drives me crazy. Being on the interstate all the time over the past few years, I just randomly stop at new stations just to see if I can find some new jerky to try out....
Not sure what "Ripple jerky" is or what these guys put in their recipes, but man ... if I could learn to make jerky like what comes in that bag, I would literally quit my job and peddle the stuff all day long. :)

Cure it for 24-48 hours (highmountain jerky cure), then string onto skewers, then into the oven for 6-7 hours leaving the door cracked open about an inch so that it's drying process instead of a cooking process. Getting ahold of lean meat with little to no fat is the difficult part around here. I've searched a few places online to order meat but haven't yet - if anyone knows of a good place please let me know.

My wife uses the same thing to make teriyaki jerky. Good stuff.

Dadsredwagon 08-29-2006, 10:38 PM Try this Believ it or not buy EXTRA lean hamburger meat 95 5 or just gota to be very low on the fat side// then mix your dry spice I use some stuff that I bought at Bass pro shops and had soem crushed red pepper. mix and put in frig overnoght covered, then I use cookie shhet with wire cooling rack placed on them, then put my oven on the lowest setting with the door cracked and 8-10 hours it will be ready,

1968 c10 08-30-2006, 07:34 PM Here is an awesome recipe for venison jerky marinade. My dad has been using this recipe for about 10 years now, and everyone tells him it's the best they've ever had.
1/2 cup Soy Sauce
1 Tablespoon Worcestershire Sauce
2 teaspoons salt
1 teaspoon garlic juice
16oz Sprite
Hot pepper flakes to taste
Let your venison marinate for 24 hours before you dehydrate it.
I'm another that uses a $10 dehydrator from WalMart...
