For the heck of it... If your cooking a brisket, here is a good mop recipe:
1 12 oz beer (darker the better)
1/2 cup light oil
1/2 onion diced
3 cloves garlic minced
1/2 cup worcestershire sauce (or liquid beef marinade)
1 tsp fresh ground black pepper
1 tsp salt
1 tbsp cayenne
1 lemon cut in half squeezed and placed in pot
1 tsp cane or brown sugar
1/2 tsp ground coriander seed
1/2 tsp rubbed sage
1 tbsp chili powder
4 bay leaves crushed
1 tsp cumin
1 tsp Tabasco
Mix ingredients in pot and bring to boil. then place on low heat. keep warm and baste or "mop" brisket once an hour during smoking.:metal:
