Looking for good recipes for BBQ.I like what we call Carolina-style,but any others will certainly be jotted down and tryed eventually.Let`s see how we do it.

there are two different kinds called that, one is vinegar based, one bbq sauce based. Which one is it your talking about.

my wife makes it by throwing a pork roast in the crock pot with a bottle of bbq sauce for about 8 or 9 hours, then when she gets home from work she separates the pork (shreds I guess)

then puts it all in a pan, and pours another bottle of bbq sauce (use stubbs if you like it a little spicey) and puts it in the oven for awhile,

then toast the bun and it's all good. I would put it up against any bbq pulled pork out there.

I`m a talkin`da vinegar kind,there hun.The sweet stuff is easy enough.Thanks Jon,and I love Stubb`s stuff.I use his pork marinade on boneless loin ribs and it is awesome.I want to "scratch-build" a batch.I just need a start to build on.I added vinegar to the McCormick packet and it dryed it out.That`s was more like converting the sweet-style.I want that eastern Carolina style.I get it along 95 at Ralph`s,as well as others.There`s a place in SC called Rad Dude`s somewhere near Conway that`s great.I even ordered some air mail for my oldest`s graduation from Wilson,NC.Not sure if it was Bob`s,but I`ve eaten there in Wilson.Heck it`s all over,just not in my kitchen.I got a nice chunk ready to through in the crock pot.

Man you are making me hungry. Look forward to seeing how everyone else does it. In kansas if you don't start on a smoker it ain't worth doing.

We make it using a vinegar based bbq sauce. I think its called scotts pigs n wings or somethin similar to that.
Start with a boston butt, slow cook in foil tent, low heat, keep dousing it in the sauce as it cooks. When it falls apart, its done..

I know that sounds gay, but its how I was taught to do it from folks who lived here forever ( Robeson county, 30 miles from sc on 95, so its eastern nc style.)
There are tons of recipes out there, that use added spices etc...

lol im a damn yank, remember :) boston butt is the uhm butt i dunno, they are called pork picnics or boston butt here.

That may be beef,I don`t know.But,like they say,"like opinions,all creatures have one",or something like that.
BTW,while we`re on hog parts...ya know the only thing I like about pig`s feet?They keep the ham outta the mud!

Got any charts on what you call that stuff on people?I`m saving these.I`ve always wanted these charts.I go in to the locker plant and ask for fenders and 1/4 panels and they always give me looks.
We should all get together dressed like indians and have a Boston Butt Party.

:) sorta but nope

old guy = 80 or older
lbs are up to you.. i buy whats on sale long as its big enough to feed the family ( i do 1/2lb per person for cushion n leftovers) . remember with pulled pork or bbq, there is not alot of shrinkage (be nice) and its chopped or pulled apart, so it goes further..

oven temp depends on mood. 220-225 for 8-10 hrs or 275 -300 for 6 hrs or so. the lower the temp and longer cooking time, more tender n yummy it is. I season to mood as well... on a bbq i was making for work or such, id just use a little pepper and garlic powder on the meat first.. then the sauce.. or just the sauce.
for us.. well we buy spices just cause they look or sound neato.. so we experiment with everything...

the best best best best is to roast a pig tho.. my gawd thats mmmmmm. I have never done it, but have friends who have pig pickins etc.. now thats the best bbq

Doesn`t anyone make BBQ from scratch?I`d like to know the basic ingredients,at least.I don`t need to steal any secrets,just something to start with to come up with my own mix.
I`m tired of feeling like I`m a good cook when I`m really just buying the good stuff and putting it together.This single dad thing has me getting into cooking.My 15 year old is eating good(better than before).His mom was a good cook,but she was lazy and seldom put the effort out.Plus,I realize she was just doing what I mostly do.Just put together store-bought products.

There are good sounding recipes out there. Only thing I see is some use butter in them and some dont. The only time I have used butter is on a totally diff roast ways.. dried mustard brown sugar and butter made to a glaze...

The elderly lady next doors son owns a bbq place in town. Ill ask her son if I see him this week, if not her for a recipe for you and see if she doesnt beat me :)

I know molasses is a big part and ketchup. Again most BBQ places will shoot you over a recipe'!! Check the net for BBQ recipes and see what pops up?

I was thinking about how we should have a recipe section,or just an eatin` section.We all eat don`t we.We all have opinions,trucks,an a-hole,and we eat.The rest is optional.:sexy:
Plus,we`re from all over...mostly American(yeah,that includes Canada).The divirsity/yet common links are interesting and come out here.What`s more american than eating...I mean BBQ,grilin`& chillin`,and all the regional cuisxxx...I mean COOKIN`?

I like the South Carolina mustard base BBQ sauce. I usually use Sticky Fingers brand. They also have a Habanero BBQ sauce that's just right.

I always use the North Carolina style "red vinegar" sauce on my pulled pork. I use Steven Raichlen's recipe, and it's always great. It's still new up here in Eastern Canada, but I've been converting friends and family for some time now.
Oh yeah, I cook on a Weber kettle with hickory smoking chunks.

basically, i have yet to find a BBQ that i didn't like. my wife (from east TN) does not seem to like the eastern NC style vinegar sauce, but it has grown on me.

I grew up eatin`vinegar on greens.So,I have a taste for that sour nectar.I love that East Carolina sauce.I like`em all,though.I love a dry rub,sweet`n`sticky,spicy hot...everything.I want to start experimenting with making my own seasonings and sauce.Kinda trying to kick my cookin` skills up a notch.

Glad ya liked the link. I've only tried a couple of the BBQ sauce recipes there. One was a mustard based sauce (I'll have to dig it up). It was awesome on some chicken.

(Now I'm hungry again. And I just ate lunch a couple of hours ago. lol)
