My pico: 1 large tomato about 4 or 5 tomatillos 1 medium sized onion - not Vidalia, I like the regular "hot" kind for pico a good dose of cilantro - not too overpowering jalapenos to taste Soak for a few hours in common white vinegar. Then drain most of it off and add salt to taste and about 1 Tbsp lime juice. Stir thouroughly and dip with chips. Awesome! (Can be scaled for a larger quantity. My wife & I usually have Mexican food every Saturday night. Ric83 10-08-2007, 02:44 PM I love Mexican food, but if it is cooked at home. :lol: I would say some of my favorites are tamales, posole, sopes, tripas. mmmm I have yet to see a real Mexican food place. As Ken stated, there are some really good Tex-Mex. I had never heard of such a thing as sopapillas or chimichangas in my life until I went to a Tex-Mex restaurant. When I go out, it is usually Chineese or American. (doubled up corn tortilla, filled with chopped Carne Asada (they have many other toppings too- dont ask) onion, cilantro, and habanero sauce) If its tex mex, i'll take a chimichanga or fajitas |
