I also use beer to pour over the meat some to knock down the flames. There you go my secret is out. They banned me for the next 5 years too!!! The secret is to cook off all the liquid from the peppers,mushrooms, onions and drain off the liquid from the beans and tomatoes, Bar-Be-Que the sausage to remove the fat and replace all those liquids with BEER!
