1#crab meat..either proceeds from a crab pickin`(steamed) or a tub pre-cooked
1 egg broken
2 slices of bread crust removed/crumbled(or just pick a roll apart)
1 tbsp mayo
2 tbsp(or more) Old Bay
1/2 tsp(or more) prepared mustard seed
1/2 tsp parsley flakes

Pretty much just mix it all up and make the patties.Melt enough butter in the pan over low heat to get a good coating in the pan.Lay them bad boys in there and crank the heat a bit.Not quite to medium, you want to cook them slower.Give them time to get a bit solid under there, then flip`em awhile till ya can`t wait anymore and eat`em.I like them on a roll and find that mustard is my favorite condiment. Many like tartar sauce, though. Some use mayo.I`ll eat then with just the roll, but I shake more Old Bay on,no matter what!

Tim,
Those sound awesome! I'm gonna try it for sure. Do you think it would work well with lobster meat too?

All true!!I believe a lobster patty would work. The spice could be changed, too.I`m sure my recipe(which is basic)would be great with a cajun twist.I`m thinking about experimenting with a mexican crab thing, either a patty/cake or a taco/burrito kinda thing.I`ve seen crab used in Sonoran restaraunts.
My recipe is a basic start. They always taste better when made with left overs from steaming with seasoning.I just made some using a 1# tub and they seemed bland.I was low on Old Bay and I used alot more than 2tbsp.Couldn`t really taste it.

71K54X4,don`t let the "Chum Bucket" get ahold of this recipe!

Old Bay is a great seasoning. I've even used it on pork. Very versitile stuff. I like the cajun idea as well.
I had a deep fried lobster tail on the weekend at a local restaurant. It was fantastic. I will be experimenting with this recipe as well.

Cheers,
Pete

Hey Tim,
Can you mail me a couple? I'm drooling all over my keyboard. My wife is looking at me funny, she thinks I'm looking at porn. I had bought 2- 1 pound cans of claw meat last time we went to Italy to shop on the Airforce Base. Me and the Mrs. made crab salad out of one can and ate it in one sitting. 2 days ago I had opened the second can to use, then I got busy so I put it in a container and put it in the fridge. We noticed it had disappered, our housekeeper had used it in a dish she made us for dinner, lets just say that she ruined the the rest of my crab meat. I think I have grounds to fire her now.

$47 a pound?Holy cheeze`n`crackers!!!It was peasant food and now for the decadant. We pay $15-17 for a 1# tub.I see it for more some places, but that`s the norm. They ship the same stuff out and it`s only price gouging that brings the price up.Other foods are distributed nationally at a consistant price.I wish I could send some down safely.
Let me know how the king crab turns out.I`d do the same thing.I lived in the Eureka,CA area in the`70s and the king crabs were a buck a piece, but no good seasoning for them. They boil them!I sent my friends large tins of Old Bay to try out.I don`t recall ever hearing results. Here I thought I may have been starting a new thing.Guess I was wrong.

yes we really get hosed down here would you believe that large male hard crabs caught local go for $36-$40 a dozen!! with the long daylight hour days i'll go and sit with traps on the river bank maybe gettin 12-18 during a days fishing but this time of year its not very productive.

the alaska legs made pretty good cakes tho nothing like the prime blue crab taste better than nothin tho// i mix hotsauce in with tarter sauce for a little zing in my sandwich with lettuce and tomatoes

in fact i just bought my christmas present today a dozen whale softies from a place in virginia they will be here on friday

When I was back home in Virginia in July I paid $190.00 a bushel for #1 males. 2 years ago I paid $150.00 for the same. Prices are outrageous for bluecrab.

Yeah, time to toss a cage with bull lips or chicken necks in the water...next spring. It`s oyster time until the locust trees flower.I think large crabs were running $48 last summer. They cost the same dine-in/carry-out.When did peasant food become a delicacey?I get a 1/2 doz.and it fills me up.I could eat lobster at a French restaraunt for that kind of money.Nothing like a blue crab, though.Beats all crustaceans in my book.I want to try a Mexican crab thing.I`m just worried about ruining my investment. It seems I`ve seen crab dishes offered at finer Sonoran Mexican joints.Something about a crab taco or burrito sounds good to me.Maybe I`ll catch some and give`er a whirl.
