Have anybody else had to add extra ground wires to fix wiring problems in there truck?

No, I would fix the wiring problem instead of adding more wires.

I installed a new coolant temp sensor in it yesterday .It seams to be starting better so far.There is to much electrical problems in these trucks when they get older my is a 2005 GMC.

Mine is an 02 with almost 300,000 miles [480000km's] and it doesn't have any electrical problems. It helps when there is no humidity in the air though haha.

More grounds won't hurt a thing.

Do you no what is the best battery voltage for every system to work .my truck battery was 12.3 volts I think that is 50%
