I'm thinking out loud...

There's several directions you could go for your cab. A new less rusty (as in NO rust in the roof!!!) cab would be best.

I don't know exactly how good the lower half of you cab is...but cutting the top off a cab and welding on would not be that bad...I'd cut the new cab part below the front pillars and cut at the rear below the belt line. This would allow you to utilize the new roof piece hopefully the best.
