I would call the manufacturer and ask for tech support. Chances are they have seen this issue before and can suggest some checks to drill down on the problem.

You could also install a T fitting and add a temporary mechanical gauge so you can monitor them both. Then you would know if it’s the gauge or the engine.

I’m guessing it’s something simple like the sender or a bad connection
