I don't know what "Stage 2" means in a Q-Jet. I would talk to one of the experts in Q-Jet repair who can make you one that is calibrated for your engine. I'd recommend a Q-Jet because that's what was on your truck when new.
As far as the Carter is concerned, it's flooding or the float(s) are set too high is why fuel is coming out the accelerator piston hole. As a result, idle mixture screw adjustment will be useless.
