It'll really depend on what wheel you end up with. The thickness of the flange itself will change depending on the center-section of the wheel. Steel wheels are usually thinner at the flange, so the amount of stud "in" the wheel will be different. If you look at mfg specs, many will list/give you the various dimensions of any stock wheel. Custom wheel mfg will usually ask these dimensions if your having something made.

Worth noting that if you do change studs, your lugs may need to be changed out as well. The capped acorn type nuts may not torque down all the way on longer studs, and if your a race-track type, then stud length is actually governable by NHRA rules....

BUT for the most part, if you buy a wheel thats set to fit GM Truck and full size car lug pattern, the stock studs should be alright. I've had various 5x5 wheels swap around, and on my 5x4.75 truck, I used all sorts of different wheels from GM vehicles (s10's, fbodies, random 90's stuff)
