As far as brakes go, you definitely have a modified system. If you look at your master cylinder, it's a split/dual reservoir unit for disc brakes. Stock 1958 would be a single reservoir unit and no disc brakes.
As far as Edelbrock vs. Holley...
Edelbrock will work out of the box without tuning/fussing, and work even when abused/ignored.
Holleys usually have to be tuned, and are more sensitive to dirty fuel, but make more power when tuned/maintained.
