You might have false oxygen sensor readings.

The cat will have a small amount of back pressure. That will keep some heat in the exhaust for proper oxygen sensor readings. If you remove the cat, it will let the exhaust escape faster, and the heat will not stay in the pipe long enough to keep the sensor at the correct temp.

You can correct all of that by using a heated oxygen sensor.
