Here's another take in addition to the temperature discussions. Tranny fluid has special additives in it to lubricate, protect, and modify the friction of the clutches. Over time the additives get used up. If you start with more fluid it takes longer to shear down and use up the additives.

And yes, there is some heat transfer and thermal inertia benefit to a deeper pan, but even better to have an inline cooler installed. Or both.
