In my past experiences most vehicles I've owned have never been perfectly level. Just taking a guess (cluelss really) at why the cab doesn't line up with the bed could be cab mounts. I have zero experience with 73-87s.
You're sitting really close to the bump stops. Can they be trimmed down some so you're not hitting them on every little bump?
