1972 K10 gear ratios
The tag on my front differential is 3.07 rear is 3.08 posi
My question is they always different on front vs rear by small amount? |

Not always, but frequently. The different sizes of the differentials makes it impossible for them to match perfectly in some ratios.

ManNamedJed is on the right track. The ratios need to be close and some of that is dictated by what gear ratios are available in a given axle design. And some of that is based on general sizes of the gears themselves, carrier breaks, etc.
It is not a design parameter to have different gear ratio in front vs. rear. 3.73 is a good example of that. In the case of the Dana 44 front where 4.09 is a common ratio, and a Dana 60 where 4.10 is the common gear. You see 3.54 in Danas and 3.55 in GM's. All of these are close enough as running 5 psi pressure difference in tires front/rear. Guys who run Dana 44 front and 9" Ford rear with the 3.54 front/3.50 rear.
