I fry spears and not chips, I think they're better. Also use a pickle you know you like I've done some with cheap pickles and I was disappointed. I like the Mt Olive kosher garlic mentioned in a post above. Next I place the spears on paper towels to get excess juices off. I use "Dixie Fry" as a base I add garlic and onion powder. Some chili powder too. I pre heat the peanut oil to 375*. Egg wash the pickle cover with the powder. Quick egg wash again then roll in Panko crumbs. Fry until golden brown...

Fried bead and butter pickles. I thought my buddy was insane until we did them with a fish fry.
I had the women asking for more but we ran out.
