Re: Taco Soup
Add some of my spicy turnip greens to it.
Ingredients: (1) TBSP minced garlic (2) TBSP Worcesteshire sauce (2) TBSP Soy (I used Tamari, low sodium) (2) Turns olive oil (or bacon grease/butter/our choice) (1) 32oz vegetable oR chicken broth (Swanson makes in a carton, or use cans) (1) 16oz turnip greens (or mustard greens, both well cleaned/chopped, get pre-washed/bagged from store) (1) 10z can Rotel tomatoes (any can stewed tomatoes with green chiles works) NOTE: substitute the Rotel with Italian style stewed tomatoes if you don't like spicy food Optional: (1) TBSP Louisiana hot sauce (can substitute w/white wine vinegar for less spice) - Bacon grease, bacon crumbles or or ham hocks/ham bone for flavor Preparation: Mix together broth and other liquid ingredients. Saute your garlic till brown with butter/grease/olive oil. When garlic is browned, add turnip greens and the broth mix and reduce to medium heat, stirring every couple of minutes until greens soften to the level of the broth. Reduce to low heat and cover, simmering until greens are soft (usually 60-90 minutes @ low heat, simmering). Salt to taste.

Re: Taco Soup
I made it last night.Just finished another bowl.I used onr packet of the "hot" taco seasoning, the beans were chili beans(pinto, kidney, and uh...)I added garlic, the whole kernal corn was Mexican-style,and more like 2.5# of ground beef because of how it was packaged.I also added some Texas-style chili powder, more cummin, and some of the red cap Adobo. That stuff is great!!!

Re: Taco Soup
I made some of this the other night. Had to fight the urge for a third bowl. Everyone at Missy's work is eating the left overs right now. Very good stuff!

Re: Taco Soup
I think the last time I posted in this thread (2008) was the last time I made some. Looks like it's time for some more!

Re: Taco Soup
I used a pound of ground chicken instead this time (about the 6th time now) and it was great.I used mexican Corn for the yellow and Chipolte White Corn for the...uh white.Got those at Safeway.Sprinkled the Mexican shredded cheese from them, too,as well as a dollup of salsa verde & sour creme, chopped onions, bits of pickled jalapenos, and cilantro. That was muy excellente!

Re: Taco Soup
Mucho Grande, sounds like some good substitutions. I have done things with it like add green beans and white beans.

Re: Taco Soup
I make this in a crock pot with (ground) chicken and white beans,so this week I decided to try boneless skinless chicken breast. Man that was GOOD! And,at $1.99 a pound it was the cheapest batch yet
