Intake Gasket- 99 5.7 Burb

I need to replace the intake gasket on my Burb. I'm not sure if I want to tackle it myself as I've never ripped into anything like this in the vehicle.
What kind of pitfalls am I looking at as far as keeping the efi and all the electronic stuff from being damaged or screwed up ?

I'f it was a simple motor with a carb or an engine on a stand I'd have no problem, but this is my DD and I cant have it down for days while I try find some glitch from moving things.
Am I better off to just pay someone to do this ?
Thanks
