We have a microwave bacon specific cooker. Has a little pour lip on it for emptying off the grease

I don't usually bother with it at home, but there's this sort of fancy Italian
restaurant that serves it in a little dish, for dipping the bread. I go there once in a while, basically just for that.

I can remember my Grandpa using bacon grease from the ceramic bowl Grandma kept on the wood fired cook stove she used. He would use it like butter or jelly on his toast in the morning with his 1/2 dozen eggs he had for breakfast. Along with the eggs he had fresh salt pork and the bottomless cup of coffee, Then it was time to go milk the 6 cows he had by hand.

Wish I could have some fresh home made bread from her cook stove again. Man, that was good eatin with cold glass of fresh cow juice.

In one of the houses the folks had when I was a kid ,,it had a pantry and in one wall of the pantry there was a door on the wall and that is where my mother stored things like grease .. it was a box attached to the outside of the house with screen around part of it ,,, as for butter ,,we had it when we had the cows and cream separator ,,but after that it was Oleo ...

I leave my bacon grease on the counter where I can get at it quick.

I use it 3:1 with real butter when I cook. Just combine them in the pan...

The butter sticks stay out on the counter as well ( in a covered butter dish )...all the time. If I don't use them fast enough, I ditch the rancid ones and replace. No issues.

Yup, our butter sits on the counter in a covered butter dish 24-7-365. We go through it pretty fast though, you know you have to have a LOT of butter on the homemade bread....

We used "butter substitutes" for years, because we just didn't know any butter. We, too, just have a block of it in a covered dish, on the counter.

My wife is of Hungarian descent, and they have a thing where bacon grease is dripped onto bread, with other fixings. I don't remember the details, because it's only something I've heard of but never eaten. For all the talk, I've never seen it prepared.

I have to have to have one piece of homemade bread toasted with lots of butter and one piece with butter and "Clear Creek Orchard" Raspberry Jalapeρo jam. MMMmmm, GOOD!

The Peach Mango Habanero jam is good too!

That jam sounds really good. Sweet and hot. But Habanero's. Whoa. I have to take off my hat to eat them because my head is sweating. Those little guys pack a punch. But I still eat them.

We recently bought one of those Frigidaire stove/ovens that has regular baking, convection baking, and air fry. Got it for a smoking deal because it was damaged at work (Lowes). I just happened to see them wheeling it out to the floor with the discounted price sticker on it. I bought it right away. When I got it home I took the control panel apart and very carefully massaged the damage out of the metal. You really have to look for it to see the tiny bit I was unable to repair.

So long story over ... I put some bacon in the oven on a foil lined very shallow baking sheet. Put it on convection at 400 and it was done in a jiffy, no stinky house from stove top frying. It was delicious.

I poured the fat out into a small frying pan with some mushrooms and did a quicky fry. More bacon goodness. Thanks again for all the tips fellas.

Haha, Ok Ok, I too love the smell of bacon. But I live in a pretty small rambler and the smell quickly permeates the house. So while Im cooking and eating, good times. But later in the day Im up for fresher smells.

A couple of my local favorites.....

They also have Jalapeρo which is good, and Sweet 'N' Sassy but that stuff will curl your toes....

I can understand that. If my one son cooks up potatoes and onions before he goes to work, it's pretty bad to walk in the house hours later to smell that. Maybe I'll work out a way for him to do that sort of thing on the outside grill so that the smell is reduced. Kind of like having exhaust fans in the bathrooms and using them, if you know what I mean.

Dont fry bacon in the house but I use it in the smoker all the time . I also do pork bellies with a maple glaze its smoked candy

I've never had pork bellies. Can you give more details, such as the recipe and how is it served? Is it a main course, or something to snack on? Is that some sort of metal wire sticking out of it?

Texas and you've never had pork bellies?
Fresh pork belly sprinkled with brown sugar . Then as it cooks I mop it with my homemade maple syrup . When it's done I cube it up . Metal thing is a temp probe. Definitely a small appetizer way to much fat for a main course

Yes, Texas and I never had that, but I'm open to new horizons and it sure looks great. I guess it's something my family just never had. How much temperature and time do you cook that for, and do you look for it to arrive at a particular temperature?
