I can speak for the high-torque mini starters. They seem to work well on engines with headers, I've never had a problem with heat affecting them. They crank nicely too, well worth the money if you ask me. The wiring setup for the 327 will be the same for any small block, so just find a wiring diagram for a truck with a 350 and you should be good to go.
