The guys above are right on, there is no other way to tell how the truck was optioned if the SPID and build sheet are gone. However, it is pretty easy to get to know your truck and determine what it had for options or what you may want to add in the future. Many guys on here could look at your truck and tell you pretty quick just about every option your truck has on it. In addition you could also get a restoration pack, (see the FAQ section) it will list the available options for your year of truck and you can simply look your truck over, go down the list and determine weather you have the option or not.
Putting options on a new label is the easy part, I have done them for many here on the board, below is an example.
