Yes this will work. Not quite as accurate indication of engine temperature as the head but will still work fine. Just make sure your thermostat matches your fan switch sender.
IE: with a 180* thermostat use a sender with 185* on and 170* off.

Edit:
I reread you post and perhaps your just wanting to know if the intake water jacket will work for the temp gauge. This will work as well.
