going wide

My '87 Scottsdale R10/C10 2 wheel drive short bed will soon be out of the paint shop. I am now trying to decide on wheels. I currently have 8" 5on5 15 inch rally wheels. My desire is to put the widest tires possible all the way around without interfering with steering/handling and not getting much out of the wheel wells. The truck will remain stock height and I have no desire for low profile tires. I want that 50's/60's look. I am trying to decide whether to go with 10" rally's or stick with the 8". Will 50 series tires fit 8" rims? How much tire can I run and not interfere with steering? Any suggestions appreciated as I'm sure that somebody has been there done that.
