I can't help you with any expert advice, BUT!!!
On the old Overhaul'n show, they "Overhaul'd" a 67 C-10 SWB stepside pickup. A VERY cool build!!!
They removed the gutter, entirely. One piece of advice they mentioned during the gutter work, was to only cut off 12 inches or so, at a time. It made it easier to weld back up. They said something about the roof metal gets out of control if you cut all the gutter off at one time
