Wiring birds nest

Ive had the truck one week now. Working out the bugs before using it as a daily driver. Here is a pic of the wiring birds nest i pulled out from under the dash board. Im takeing out all non original wiring. Im working under the hood next which isnt much better.

Looks like you've made good progress on a lot of crap that shouldn't be there. The nice part about doing it yourself is you get really familiar with what should go where. If you ever have to diagnose a fault, you'll be in a better position to correctly identify the issue.

I used to tell my wiring guy "I can't wire a whole truck/car". He asked me on the last job, "you can run one wire can't you?". to which I answered "Yes". He said "well, run one wire. when you get done with that one wire, run one more". Looked at like this approach it's not that hard.
You might want to look at the "Mad Electrical" web site. He has "tech tips" as well as sells kits to make the under hood wiring much better and if I can understand it, anybody can. Do or don't it's up to you, just thought it might point you in the right direction.

That's the trick. Take 1 wire at a time. It seems very overwhelming at some times, but you got this.
