My wit beer

Brewed a Belgian wit beer 10 days ago 7 days in the fermenter. 3 in the keg under CO2. Coming out nicely. Very smooth with a hint of banana.

You have to take your wit, and mix it with fresh fruit. Then let it bottle ferment for a nice Lambic style.

It is what a hangover tastes like.

Nice... Banana flavor always scares me with a beer. When I brew it is a stout or imperial stout and banana flavor means that the fermentation temps got out of control. I usually have to ferment for 2 weeks or so to avoid bottle bombs and geysers. I usually shoot for a 10-13% ABV. Brewing with chocolate is a PIA but chocolate oatmeal stouts are my favorite.

I guess I'm a beer bore. I've always enjoyed a quality beer. But I eat plenty of fruit and when it comes to beer I like mine to taste like beer. There is plenty of variety in that for me. I'm not serious enough about drinking or do I need another hobby, so this home brewing thing passes me right on by. Might try my hand one day, perhaps once retired.

So now I ask, what is a wit beer?

Special K. Wit is a Belgin wheat beer. I am actually alot like you in the beer profile thing but I prefer a plain dark beer which are pretty hard to find. The micro brew crazy really messed them up and drove the price up. I do like oatmeal in a heavy stout. It was originally used to reduce the grain needed but added a silky effect to the beer. Price somewhat dictated this since a beer like Bud (pilsner) takes about 5 pounds of grain to make 5 gallons where a imperial stout can take 26 lbs for the same 5 gallons. Dark beers come from using toasted barley which is alot like roasting coffee beans.

Bud is a lager... Miller is a pilsner. My 2 cents!

I have a buddy who is a beer brewing guru.. he says the main difference between a pilsner and a lager is the brewing temperature. Lagers are brewed much colder through the whole process.

Your wit looks tasty by the way! I like a good wit now and then... more of an IPA guy.

Wit is a light wheat beer. Very low on hop flavor and can either have a clove or slight banana aftertaste depending on yeast and fermentation temp. 4.2 % is about the right abv for this variety

I used a yeast that ferments around 68°. Now my northern English mild brown ferments around 62° . That 6° and the strain of yeast can totally change the flavor profile.

Beers like blue moon people put orange slices in it to get the flavor . Good beers use yeast and temps with the addition of orange zest to get the flavor .

Ya you wouldn't want banana in an ale or lager. I have a temp controlled fermentation vessel for those type of beers . I just used a swamp cooler for these . And when u want some excitement I brew a saisons or farmhouse beer warm fermentation which means sometimes violent to explosive. Learned to use a blow off tube . Let's say krausen all over the ceiling isn't that appealing. Love the slight pepper taste .

I usually end up using a cold bag with frozen bottles to regulate temps. Blow of tubes are a must for the first couple of days. I have had a few that ran into a coffee can and still blew over. After a couple days I switch it to the S shaped air lock to finish. Enjoy your beer!

So wit is wheat. Looks and sound like a beer I'd like. I usually get a wheat at a Guchi beer joint. I like a lager mostly. Quality bottled beer I'll rotate on is Steela Artois, XX Lager Especial, Hacker Pschorr, Paulaner, Spaten… But I'm not super picky. I guess that's why I never jumped into the whole micro-brew thing. I'll order Hefeweizen if a waitress mentions that among all the mumbo jumbo . Otherwise, I just tell them what I look for in a beer and let them pick. I don't drink dark beer too much anymore. I remember going to bars and ordering a Guiness Stout, a Beck's, and a mug in my young and reckless days

Round here is brewery crazy, chalkboard with 100 different beers I've never heard of, tried quite a few, a lot give me an instant headache, like those ipa beers, do like the one pilsner from a local brewer. Dogfishhead brewery is local, still haven't done the tour. Your beer looks tasty though
Usually I settle for a 16oz pabst blue ribbon with my shrimp and filet mignon dinner, love that I can get a tallboy can in a restaurant here, and they're only $1.75!

I've been kicking around the idea of brewing beer. My buddy did it years ago and he made some good brew. But he said it was expensive and quit doing it. Too bad because it was good stuff.

And the second thing is getting all the details correct. I was never any good at science and it seems a bit complicated to me and I don't want to spend money to make a mess. I'm perfectly capable of doing that without spending a dime.

When I want a beer. I have a hard enough time finding which end of the can to open.

Brewing cost is relative. If you are brewing something like Coors it is expensive but if you have a taste for a higher priced beer it's not so bad. One of the things is you need to move away from kits and buy bulk ingredients. This in turn means more equipment. Either make equipment or look on craigslist. It's like our old trucks, you can get by for a little investment or really spend some cash.

Either way, it takes a man serious about his beer to make his own. And for some it's about the trip as much as getting there.

And another thing, by golly! Since when do economics play into beer drinking? Yeah right! Do you ever finish a beer, want another, but first calculate, "If the 6-pk was $10.59 w/tax and I've had two, that's $3.53 so far. If I have another that jumps the cost up another $1.76 making a total of $5.29+/-. Hmmmm… If I did that every day all week I'd be spending...……...and monthly...……………..

Kits are expensive. I buy grain in bulk and have the equipment to brew. Most I made some I bought . Without the equipment I'm at about 55 cents a pint on average. This brew was 31 cents a pint not many ingredients.

I am an IPA Junkie. I love them. My faves now are Stone and one called Brew Free or Die. We have a brewery here in Santa Rosa called Russian River Brewing Company. They make a couple that I really like, and just opened their distribution to beyond the brewery.

I have thought about getting into the home brewing stuff, but I can find what I want already done. Maybe when I retire and can set it up and watch it all go. LOL.

Actually every time I go to the store and buy beer now. A 6 pack of Guinness Extra Stout is $11 and a suitcase of american in $18. I save the dark beer for a more special occasion. Alot of the beers I like are $15 or more for a 4 pack. I have a budget so cheap beers mean more car parts. I brewed one imperial stout that cost me $75 for the ingredients and made 4.5 gallons.
