Setting up steering u-joints on a 66 custom

Good morning...
I am starting to mock up my steering in my truck...I am running a custom xmember with a mustang power rack, so U-joints have to be involved.. it is sooooo close to be able to get by with just 2 (one at end of column and one on the rack) but the clearance at the motor mount is concerning and just not enough...Therefore, i either have to run 3 with a carrier, or another thought i had was a double ujoint at the rack to get the slight offset i need from the engine mount, then one on the column...Has anyone used a setup like this and what are your opinions? Ill attach some pics..

Let me know your thoughts on how you would tackle this...I think i like the double ujoint idea but i have never used a double....thoughts?
