Bacon Wrapped Meat loaf w/Bacon
okay...not healthy at all, but good for the taste bud...unless you're a plant eater than, this is probably not up your alley.
2 pounds of angus ground beaf 1 pound of ground sausage of your choice 2 pounds of bacon 2 eggs 1/2 half package of crushed saltine crackers *your choice of spices* spices I uses: 1 tspn - cayanne pepper 1 tbspn - salt 1 1/2 tbspn - spicey toney cacherees 1 tspn - old bay spice - preheat oven to 350* - cook 1/2 lb of bacon and chop into pieces - mix all ingredients including 1/2lb of cooked bacon pieces in large mixing bowl (leave the rest of the uncooked bacon aside for now. - roll mixture of meats and goodness into a football shaped loaf - lay uncooked bacon strips down on cutting board and slap the loaf on top...pulling the bacon around the loaf. put the rest of the bacon over the top of the loaf and completely wrap (*see picture of finished product below) - place in ungreased glass baking pan and stick it in the oven covered for 45 minutes. - turn up the heat to 385* and remove foil...check after 30 minutes (*you may have to make a couple cuts into the loaf if it doesn't cook good at this point. depending on how even your loaf is rolled out) continue to cook until the meat inside is done...(*i've had to leave it in the oven for about 2 hours before and never burned it...the bacon keeps everything nice and juicy) now...enjoy your awesome creation

Looks pretty good but I woulda bacon wrapped the bacon wrapped meatloaf with bacon but hey... lol

But my mouth is watering, and I now want to give this a try. I could make this last for days with left overs

my wife loves it...i have a method of rolling the meat loaf so it's easier to wrap the bacon and cooks evenly...a budy of mine showed me a while back. basically get some plastic wrap and put the plastic wrap around the loaf like a tootsie roll and roll it up so it's more like a log and get it as tight as you can then wrap the bacon around it...i'm telling you guys...you won't be dissapointed, and your friends will think you're a genius

i've done a pork tenderloin...I pan seared it on all sides then i stuffed it with smoked chillis and cream cheese then wrapped it and baked it...turned out great.
i found that if i pan sere it prior to baking it (even if it is wrapped in bacon) keeps all the juices in better to keep it as tender as possible. I've also used this method with bacon wrapped boneless chicken breasts...I love bacon!
