Who Likes Cookies?

Needed something to do this morning so I baked some of these. This was my Mother-In-Laws Oatmeal Raisin cookie recipe. I just modified it a little.

Leon's Oatmeal Chocolate Chip Cookies

1 cup shortening
1 cup sugar
2 eggs
2 cups flour
pinch salt
1/2 tsp. cinnamon
1 tsp. vanilla
1 Tbs. Kahlua (optional, but you'll ruin the cookies if you don't)
1 scant tsp. soda in 4 Tbs. milk (3 if you use the Kahlua)
2 cups oatmeal
1/2 pkg. chocolate chips

Beat the shortening and sugar together until light and fluffy. Add the eggs one at a time and beat well. Add half of the the flour and milk/kahlua/soda mixture. When that is mixed well add the other half. Mix in the oatmeal 1 cup at a time. Mix in the chips. The original recipe called for a full bag of chips but that seemed like too many for me. Your mileage may vary.

Bake 10 to 15 minutes in hot oven (375º F) Yummmy!

I Have a really easy recipe. Let my wife do it.

I've been wanting to learn to bake. I like to cook and do everything from scratch. With one glaring exception. Baked goods. Rolls, buns, pizza dough. Things like that.
I know fresh out of the oven bread etc. would improve what I make. But I'm a little scared to pull the trigger. I just know I'll mess it up. Baking seems to be very exact and I'm a sloppy cook. A little of this, a little of that and see if it tastes good. Baking's a little different. At least I think it is.
We just got a donut maker. So I guess I'm going to have to jump in the deep end of the pool and fire up my mixer.

Fingers crossed.

If you want to bake with ease, get a bread machine. We have had several since the early 90s. These machines mix the dough, rise, knead then bake. You just add the ingredients and walk away. Come back to fresh bread.

When it's done, and the new loaf is cooling, no one in my house can resist cutting a warm piece and adding butter.

Some machines cook the loaf on the end, vertical up and down. We prefer the ones that cook the loaf horizontally. They cost more but the bread is better and is very easy to make. There are lots of recipes too. I particularly like to make dough for cinnamon rolls on Christmas morning.

Which one is the best? I don't wanna have to use their proprietary mixes and powders. Just one that you can throw whatever you want in there.

All the ones we've owned have used basic ingredients like flour, eggs, milk, etc. The only special thing is the bread machine yeast. However, it's available in our local grocery store so it has not been a issue with buying from any specific company.

There are many recipe books out there that are not machine specific too. Before she passed, my mother-in-law used to make me Pepperoni Bread! Yummy!

I have one of the vertical ones. I never really cared for it. Maybe I just didn't work it right. I would just dump that bread machine mix in it. The bread was good. But it came out in huge loaves and wasn't too versatile.

Baking is just something I'd like to learn to do. I like to do things myself. Or screw things up myself as the case might be. But that's how I learned to cook. Expect perfection and expect a disaster all at the same time. Then find out which one you got. I don't need to go to Vegas to gamble. I just need to go to the kitchen and roll the dice.

I baked my wife a birthday cake once.(Aren't I thoughtful) It was the ugliest thing that you've ever seen.

And it got worse. I lit the candles on the ugly cake and walked out to her singing Happy Birthday and the candles caught my beard on fire. Then caught my whole face on fire. Ah...Nothing says I love you like lighting your head on fire. Women just love it!

I didn't get burned much. But my beard was a lot shorter after that. And the cake didn't smell to good all covered in burnt hair. But at least I gave her a birthday party that she'll never forget.

And recently there was the garlic bread incident. I went to check my garlic bread in the oven and it was on fire. Big fire. It looked like I had sprayed Napalm on it.

I guess there's a reason I'm hesitant to bake...And keep a fire extinguisher in the kitchen.

I baked a loaf of bread in my machine yesterday. Mine is an upright.

Mine is an older Toastmaster upright. It has always worked good.

Most of the regular yeast has been "re-engineered" so it works good in a bread machine. It will say on the packet. I used a packet of Red Star Yeast for the loaf I baked yesterday and it worked good. The secret is to always use fresh yeast.

Good Bread Recipe


Ingredients:


1 cup warm water (110º F - 45º C) (I start with it a little warmer as it cools down a little when poured into the pan 115º-120º)

2 tablespoons white sugar (mix with the hot water)

1 (.25 ounce) package bread machine yeast (2 1/4 tsp)

1/4 cup vegetable oil

3 cups bread flour

1 teaspoon salt


Directions:


Place the water/sugar and yeast in the pan of the bread machine. Let the yeast dissolve and foam for 10 minutes. (This is important)

Add the oil, flour and salt to the yeast. Select Basic or White Bread setting, and press Start. That setting on mine is about 2:40 but I took it out 20 minutes early yesterday. If the bread tastes a little yeasty cut the yeast down to 2 teaspoons.

Chocolate No Bake Oatmeal Cookies

1 stick butter
2 cups sugar
3 TBS Cocoa
1/2 cup milk
1 tsp Vanilla
1/2 cup Coconut
1/2 cup nut meats (optional)

Bring ingredients to a rolling boil and boil for 1 minute.
Remove from burner and add 3 cups Quick Oatmeal &
1/2 cup nut meats. (if desired) Mix well and drop by
spoonfuls on waxed paper.

This was my moms recipe. Pretty easy!

amen to that! and just who doesn't like cookies?!

where were you all those times I tried to get mom to put chocolate chips in her oatmeal cookies?

lover her dearly but just couldn't think out of the box sometimes

There was an act-or named Kookie. Seventy Seven Sunset Strip... snap snap

So Leon, on that cookie recipe I just use the same amount of raisins in place of chocolate chips for oatmeal raisin. I can always enjoy some chocolate, but golly Bill them oatmeal raisins is enough to make a feller want to set and eat his self a batch and deal with gittin' sick later!

So Leon, on that cookie recipe I just use the same amount of raisins in place of chocolate chips for oatmeal raisin. I can always enjoy some chocolate, but golly Bill them oatmeal raisins is enough to make a feller want to set and eat his self a batch and deal with gittin' sick later!


Oatmeal raisin is my favorite. I'm drooling thinking about them.
