Tongue [Lengua]
1 Beef tongue
2 Cans of cheap beer 2 Stalks of celery, cut into 3" lengths 2 Carrots, cut into 3" lengths 1 Onion, quartered 1 Tomato, quartered 1/2 Bell Pepper, sliced 2-4 Cloves Garlic Water Cilantro Parsley Bay Leaf Whole Peppercorns Kosher Salt Crushed Red Pepper Flakes Put tongue in a large pot/Dutch oven & pour in beer. Add vegetable and seasonings. Cover everything with water. Bring to boil over medium heat; then lower heat to low. Cover & simmer for 3-4 hours [or 7-9 hours inn a crock pot on low]. Remove tongue from pot & cool with cold water. Remove skin & bone & gristle from thick end [if the butcher didn't already do it]; & put tongue back into cooking liquid. Remove pot from heat & allow to cool naturally. Remove tongue from liquid. Strain & save liquid [beef stock] for use in another recipe. Discard vegetable. Slice tongue and use for sammiches, high protein snacks, entree, or whatever you like. Before the kids can say "EWWWWWW!!" tell 'em it's your "secret recipe pot roast" because it tastes just like a pot roast, only a lot more tender. You can mix-n-match the vegetables & seasonings to suit your particular fancy.
